Pork Chops with Jamon

Ingredients
- 350 g pork chops (2 medium, ~2–2.5 cm thick)
- 300 g potatoes (2 medium), thinly sliced (3–5 mm)
- 40–50 g jamón, finely chopped
- 1 small onion (~100 g), sliced
- 1½ tbsp pork fat or oil (split use)
- black pepper
- salt (optionally if jamon isn’t salty enough)
- 2–3 tbsp water (for finishing)
Instructions
Prep: slice potatoes and onion, chop jamĂłn, season pork chops lightly with black pepper only (salt only if jamon isn’t salty enough)
Pan on Medium (160 °C), add 1 tbsp pork fat or oil, add potatoes in one layer, cook 7 minutes, turning once or twice
Remove potatoes to a plate
Keep pan temperature stable, refill fat/oil as needed, Add onion, cook 2 minutes until soft, add jamĂłn for 30 seconds then push everything to the side
Add pork chops, raise heat by ~20 °C, sear 2 mintues per side but do not move while searing
Lower heat to Medium-low (120–140 °C), then mix in the potatoes, onion, and jamón around chops, add the 2–3 tbsp of water and cook for 4 minutes
