Mushroom Stew

Ingredients
- 500 grams of mushrooms
- 100-150 grams of bacon
- 2 onions
- 1.5 spoons of duck fat (or other fat), oil also works if fat not available, but not as tasty
- 1 spoon of paprika
- salt
- 1 pepper
- tomato paste (amount depends on your preferences)
- parsley (optional)
- 100-150 ml of water
Instructions
- Cut the mushrooms into slices and set aside.
- Cut the bacon into cubes and set aside.
- Cut the onions into very small cubes and set aside.
- Cut the pepper into very small cubes and set aside.
- Add the fat into a pot, cook on 120 degrees Celsius, wait for it to melt and heat up.
- When the fat (or oil) is ready, add the bacon and onion and cook 4-5 minutes.
- Remove from heat, add the paprika, stir well, and then add the pepper and mushrooms and put the pot back onto the heat and add ~100ml of water. (add more if water is not enough)
- Add tomato paste and stir everything well.
- Cover the pot and cook for half an hour, decrease the heat to 100 degrees Celsius.
- It is good to serve on top of mini penne pasta!
