Hungarian Kotlet

Ingredients
- 500g minced meat (pork or 50/50 mix of pork and beef)
- 1 onion
- 4 pieces of garlic
- 2 eggs
- 2 buns (from normal white flour)
- 1 lire of milk to soak the buns (you’ll probably not need that much milk)
- salt, pepper and paprika powder
- breadcrumbs
- pork fat (or oil if not available)
Instructions
- Cut the buns into small cubes soak them in milk. You need just enough milk that the buns can absorb.
- Sauté the finely diced onion (4-5 mins on 120C), grate the garlic in the meantime.
- Mix the minced meat onions, grated garlic, whisked eggs, spices with the buns.
- Form even-sized meat patties with wet hands and roll them in breadcrumbs.
- Shallow fry (160C) in a skillet for around 5-5 minutes per side until golden brown.
